Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves of garlic, minced
  • 2 tbsp dried mixed herbs (such as oregano, thyme, and rosemary)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Directions:

  1. Preheat the oven to 200°C and line a baking sheet with parchment paper.
  2. In a small bowl, combine olive oil, minced garlic, dried herbs, salt and black pepper.
  3. Place chicken breast on the prepared baking sheet and liberally coat with herb mixture.
  4. Bake chicken for 20-25 minutes or until internal temperature reaches 75°C.
  5. Sprinkle the grated Parmesan cheese over the chicken breast and bake for an additional 5 minutes, until the cheese is melted and golden brown. Let the chicken rest for a few minutes before serving.
