Ingredients:

8-10 small tortillas
1 cup cooked shredded chicken
1/2 cup shredded cheddar cheese
1/4 cup diced onion
1/4 cup diced tomato
1/4 cup diced green chilies
2 tbsp chopped cilantro
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
Salt and pepper to taste
Oil for frying
Instructions:
  1. Combine the cheese, onion, tomato, green chilies, cilantro, chili powder, cumin, garlic powder, salt, and pepper with the chicken that has been shredded. Combine completely after mixing. 
  2. For 30 seconds or until warm and pliable, microwave the tortillas. 
  3. Each tortilla should be filled in the middle with a few spoonfuls of the chicken mixture, then it should be securely rolled up. 
  4. Heat enough oil in a big skillet to deep-fry the taquitos until they are crispy and golden. Taquitos should be fried in batches for two to three minutes on each side.
